A New Chapter

Hey everyone! You may now notice that I have changed the name of this blog (previously rawlivingfoods). Why did I do this? Simply because, as my life changes, I want to reflect my own experience and share a vegan lifestyle that includes some cooked foods and not strictly raw vegan foods. I look forward to sharing more of my journey as well as an expanded view of the plant-based lifestyle!

Raw Vegan Coconut Almond Yogurt
Hey everyone! I thought I would share my coconut almond yogurt recipe which is not only delicious but also very filling and satisfying. I have been having this for lunch every day and I even sometimes have left overs which I use in my salad dressings. I also felt the need to add something more substantial to my diet since I am working out more and I feel better including more healthy fats and proteins. And I highly recommend this recipe to all the men reading this who want to bulk up and gain muscle on a raw and vegan lifestyle.
1 cup Raw Soaked Almonds
1 cup Thai Coconut Meat
1 cup Thai Coconut Water
Soak Almonds for 12-24 hours. If you don’t know already, soaked nuts and seeds are much easier to digest and have more enzymes, proteins, vitamins, and minerals due to the elimination of nutritional inhibitors and toxic substances. When you soak nuts and seeds they are literally activated! Add your 1 cup soaked almonds to a high speed blender or cuisinart (which I use since I have yet to purchase a vitamix). Next open your young Thai coconut (I use a tool called the coco jack) and add 1 cup of the water from the coconut using a strainer. Then scoop out the meat from the coconut (coco jack also has a scooper available which I use) and add to your food processor or blender. Also be careful not to add any wood debris from the coconut shell. Blend all 3 ingredients together until you have a smooth creamy consistency. You can also make larger batches (for example, 3 cups of all the ingredients) and that you can store in the fridge, instead of making a 1 cup batch every day. Enjoy! :)
